Happy Weekend everyone! I am addicted to Instagram and I often post there more than any other place on the web. I notice that I get the most love on posts with baking gluten free things were featured. So really quick and basic bread recipe for everyone. It's very flexible, you can do it in the microwave or in a frying pan, either way you get delish fluffy bread for pancakes, muffins, sandwiches, cakes etc...
Ingredients:
3 tablespoons Masa flour 3 tablespoons Soy milk 1 teaspoon Baking Powder 1 Egg salt or stevia to taste, depending on what you're doing. Could be either sweet or savory.
Directions:
Mix all together in a small container. If you're doing this in the microwave you can do this in the same container you are going to be baking in. If you're doing pancakes, you want this mixture to be thinner. So add an extra tablespoon of soymilk.
Cook for 2 minutes in the microwave. If you are doing this in a frying pan, grease the pan first and pour the batter into a pan over medium heat. Wait for little bubbles to come to the surface before turning over.
While you're waiting for the bread arrange your sandwich ingredients. You can make an egg and cheese sandwich, or just cut the bread in two halves and spread jam, butter, Nutella, whatever your preference is.
When you take the bread out from the microwave wait for at least two minutes before cutting it. It will have a springy texture with air bubbles, which are perfect for taking in a sauce or butter, or vegetable oil spread. Whatever your preference is.
Assemble your sandwich or slather on your spread of choice. Enjoy!
