Meal Prep is simple with this chopper from Amazon. I've been my Mom's chef since she's had to adhere to a low iodine diet for her parathyroid test coming up. I'm joining her since it's mostly fresh veg and fruit and fresh cooked protein.
This chili: I just roasted the Roma tomatoes, peppers, celery and carrots and onion in a pan under the broiler to get a good char. I soaked the beans for 24 hours, I used pinto beans. Blended the veg. Put the whole thing in the slow cooker for 4-5 hours on high, turned out delish!

The Prepping has been simple, I steamed some veg and made oats, cut fruit salad and prepped chicken breast.
